The Hatch Chile Festival is an annual celebration of the famous Hatch chile in Hatch, New Mexico, held every Labor Day weekend, featuring a parade, carnival rides, chile vendors, roasting demonstrations, eating contests, and various food options all centered around the unique flavor of the Hatch chile. The festival, which began in 1971, has grown into a large event attracting tens of thousands of visitors eager to experience New Mexico's chile harvest and culture.
